These recipes are enough for a whole ice-cream party.
Hot Fudge Sauce
1 12oz bag of chocolate chips (melted)
1 C of sugar
1 1/2 cup of heavy cream
1 C light corn syrup
1/2 C cocoa powder
1/2 teaspoon of salt
6 tablespoons of butter
3 teaspoons of vanilla extract
1 can of sweetened condensed milk
Bring melted chocolate, sugar, heavy cream, corn syrup, cocoa powder, salt and butter to a low boil until all ingredients are well blended and dissolved. Remove from the heat and add vanilla and sweetened condensed milk.
Carmel Sauce
1/4 cup butter (melted)
1 cup light brown sugar
1 cup light corn syrup
1 can of sweetened condensed milk
1 teaspoon of vanilla extract
Bring butter, brown sugar, and corn syrup to a low boil until all sugar is dissolved. Remove from the heat and add vanilla and sweetened condensed milk.
For the RICE
4 cups sweet rice (I honestly used regular Botan
Calrose rice. It turned out great).
2 cups water
1 cup of mango juice.
2-4 large mangoes (peeled and sliced)
Cook the rice in 2 cups water and 1 cup of mango juice.
For the coconut cream sauce to go over the top
2 cans full-fat coconut milk
1/2 cup of sugar
2 teaspoons of cornstarch
Add cornstarch to coconut milk before heating and mix well.
Add sugar and cook on medium heat until sugar is dissolved.
Pour the sauce over the cooked rice and peeled and sliced
mangos.
Serve warm or cold.
Ingredients
2 pounds mushrooms,
2 tablespoons balsamic vinegar
1 tablespoon soy sauce
3 tablespoon of minced garlic
1/2 teaspoon thyme
salt and pepper to taste
Directions
Slice and skewer the mushrooms.
Marinate the mushrooms in the mixture.
Bake in the oven for 10 min at 350.
No not really pudding. More like a cake soaked in yummy sauce.
Ingredients
Cake
1 ¼ c Dates finely chopped
8 oz boiling water (Soak the chopped dates in this water while you get the rest ready).
½ cup unsalted butter (melted)
1 cup brown sugar
4 eggs large
1 ¾ c flour all purpose
½ tsp baking powder
1 tsp baking soda
2 Tbsp cacao powder
1 pinch salt
Pour into a 9"x9" baking pan and bake at 350 for 50 min.
Dump this sauce on top:
Sticky Toffee Sauce
¼ cup butter unsalted
1 cup brown sugar
2 cups heavy whipping cream
Bring to a med boil stirring constantly.

The Choice to Heal

Our choice of response to an event in our lives, is one of the most influential factors that will determine how we, as individuals, will experience that event. Individual choice, and the resulting individual actions, can ignite us on a journey which can involve learning and betterment, healing or renewal, or the opposite.
Consider the case of a personal challenge, or even a crisis. We often feel helpless in the moment, wondering how we are going to overcome the challenge. When I’ve felt challenged in the past, I’ve found that learning from others far wiser than me has been helpful.
A good first step in dealing with challenges is to take a pause, and think about the things for which we’re grateful. Making the choice to feel gratitude can change our perspective on the challenge in front of us.
Another helpful step is to choose to focus on the things that are within our control. We can choose to not get frustrated by those things outside of us that we cannot control. For example, we may not agree with how a situation is being handled. Or we may not like the feeling of helplessness we feel in a given moment. Rather than getting frustrated and angry, we can evaluate the ways in which we can contribute to the change that we want to see. Or we can write down a list of the things that we can do that are within our control, and focus only on that.
Choosing to adopt a long-term outlook on solving the challenge in front of us can also be a powerful way to begin to address a challenge, especially if a healing process needs to be involved. Healing doesn’t happen overnight. It can take days or weeks or months or years of discovery, learning, and mending to see the results we desire. We should be patient with ourselves, and persist in our efforts over days or weeks or months.
Practicing simple forms of meditation can help reduce stress. This is another proactive choice we can make to pause and care for our health and mental state. There is evidence that even just ten to twenty minutes a day of focused time meditating can help with stress and healing. It doesn’t require a fancy place. Simply finding a quiet room or corner somewhere, to sit down and close your eyes, and focus on breathing, is a good start.
These are just some of the ways in which the choices we make, and the individual actions we take, can help us begin to address challenges, or even initiate a healing or renewal process.

The Advantages of Writing in Multiple Genres
When I first began to publish, I had no idea how
intricate and complicated the process would be to develop a professional
product in print. Our 4H club had asked me to write a little book on how to
raise sheep—which I eventually did over a two-year period. At that time, I wrote
for families and people who knew us in the club. Friends and family are
forgiving and supportive, and they gave me a false sense of security about my abilities
to explain what I’d learned over twenty years with sheep. Writing is easy and
so much fun! I say that now as I’m laughing…
The sheep book and my love of sheep was a joy
to write, I’ll admit. A primer to learn the art of writing fiction—it was not.
My book adviser through Book Surge, (Amazon’s publishing company at the time,)
expressed surprise at my switch from non-fiction to genre fiction. Actually, he
was shocked. His reaction seemed odd to me at the time.
It wasn’t until I waded deep into the fiction process,
that I understood my advisor’s gasp on the other end of the phone. The literary
pool I’d fallen into had water way over my head. The research and years of
looking into the various genres was arduous, and the harsh critiques I’d
received from literary agents in online bootcamps were brutal to my
self-esteem. Writing is hard. It’s that simple. Writing fiction takes a certain
knack and the ability to create endlessly. All the while, following rules
authors are expected to follow for their readers depending upon the genre.
Ten years later, in 2018, Stolen Obsession came
out in paperback. What a proud moment for me. Finally, I had a finished my
first novel, one that had morphed from a single volume into a carefully planned
series. The Annalisse adventures I write about include an antique-loving
amateur sleuth who can’t seem to keep herself out of mischief and killers who
want to do the couple harm. The books cross into different countries and subtly
slide into various genres. The cross-genres happened accidentally—but situations
emerge for a reason.
Writing the first four books in the Annalisse series
has taken me from romantic suspense, thriller, and suspense, to romantic
mystery. Mostly in international settings. Having a couple begin their dating
experience while traveling exotic lands takes readers to places most of us
won’t ever visit in a lifetime. By writing in different genres with characters
who’ve become friends to my readers has given me the freedom to explore each
genre without learning new main character backgrounds—while keeping the focus
on the protagonist and her love interest, Alec Zavos. Should I decide to begin
a new series with the detective from my original books, I will already have
experience with what readers expect in each new category and theme of work. Some
readers want to hear more from Annalisse and Alec’s detective friend, Bill
Drake!
I wrote the children’s book, Mia and Nattie: One
Great Team in 2020 after we lost the sheep that had become part of our
family. The story is based on true events and learning experiences we had with
the only bottle lamb my husband and I ever raised in the laundry room. They
were heartwarming experiences I felt needed exploring in the public square. A
picture book for children to teach the heartfelt life-lessons we had with
Natalie, our horned Dorset ewe.

Eight Tips on Researching History

When I first
offered to write Idaho Madams for Farcountry Press, in the interest of
fairness, I explained that I didn’t know how to research nonfiction. When they
said yes to my proposal, my stomach tumbled. I needed to learn how to research
history fast.
Many people offered
advice that I followed. Here are a handful of their
suggestions and things I learned along the way. I’m a western writer, so much
of this comes from that perspective.
1.
Go to the
libraries. Libraries are great
resources. Librarians will walk you through research sites, point out related
books, and help you find dissertations. Dissertations have valuable information
with sited sources. These sources can be added to your list of potential resources.
2.
Go to the
archives and historical societies.
Archives are amazing places. Look at the old newspapers. They’ll supply
stories, advertisements, pictures, sketches, opinions, all fascinating to look
through. If you can’t go, call them and ask for their help.
3.
Go to related
museums. Talk to people and listen to
their stories. Ask questions about the event you are researching. I called the
Oasis Brothel Museum in Wallace, Idaho to get a book on prostitution in the
late 1800s. They didn’t have the book, but they had something better: the
author’s telephone number. I called and left a message. He called right back. I
also went to the Oasis Brothel Museum. It was like a time capsule, undisturbed
from the moment the women fled out the back door to escape the law.
4.
If you can do it,
go to the area. Walk the streets and
alleys, especially in the older sections of towns. You’ll get a feel for the
land, town, or city. You’ll get a sense of the people who lived there. While
writing Idaho Madams, I went to Murray, Idaho by crossing Thompson Pass,
although not during a blizzard as Molly B’Damn had done. I went to a museum
dedicated to Molly B’Damn. I sat at the bar one morning and ate a jalapeno
cheeseburger, listening to the bar owner and one of his early customers tell
stories about Molly B’Damn Days, a yearly festival in Molly’s honor. I walked
around the small mining town and up to the cemetery where Molly is buried.
Molly was your quintessential madam with a heart of gold. The town still
reveres her. The feel of this area was a goldmine of information for me.
5.
Surround yourself
with photos of the area, people, and time.
This will help with details and generate a sense of time travel.
6.
Search websites such as Wikipedia, Ancestry.com, newspapers.com,
oldnews.com, myheritage.com. These webites can provide great information on
historical events and people.
7.
Know when to stop researching and start writing. It’s easy to get pulled
into the endless web of information.
8.
Finally, document
each resource as you go. This will save
a lot of future work, retracing your steps and recreating the list of sources
used.
